So yummy it’s almost beyond words. Kick off summer and get it on the grill!
- 2 c. fresh basil leaves
- 1/2 c. olive oil, divided
- 1/3 c. white wine vinegar
- 3 tbsp. grated parmesan
- salt + pepper
- 4 large tomatoes, sliced horizontally into thirds
- 6 oz. fresh mozzarella, cut into 8 slices
Preheat grill to med-high.
Process basil, 1/3 c. oil, vinegar, parmesan, salt + pepper in a food processor until smooth.
Coat tomato slices with remaining oil (about 3 tbsp) and season with salt + pepper. Grill tomatoes, covered, on one side for 1 minute, then flip (do not flip the tops).
Arrange cheese on flipped tomato slices and grill until it begins to melt, 1-2 more minutes. Assemble stacks with 2 cheese-topped slices and 1 top. Serve with basil sauce.
